To promote the most sustainable agricultural practices and to maximize the benefit of humanely raising our animals, PRMC focuses on selling whole animals. Beef

Our beef comes from the Prather Ranch, synonymous with the highest quality, best raised beef available. Their unique closed herd is raised on thousands of acres in Northern California. Certified by both Food Alliance and Certified Humane Raised and Handled, Prather Ranch does not use hormones or antibiotics. In addition, the beef is dry-aged—an increasingly rare practice—to develop a tenderness and rich flavor lacking in most beef today.

Our poultry comes from small, independent farms where the animals forage for bugs and peck at high quality feed for nine weeks in sprawling pastures before arriving at our shop. Heritage Breed Turkeys:  PRMC is offering heritage breed turkeys again this year from Frank Reese at Good Sheppard Farms. These Bourbon Red and Golden Bronze turkeys are some of the oldest breeds of registered livestock in the U.S and the meat is so full of flavor you have to taste it to believe it.

Our heritage pork comes from Certified Humane Raised and Handled and/or Food Alliance Certified Berkshire and Large Black pigs. Raised on open pasture, these animals are fed a balanced diet including fruit and vegetable culls from nearby farms. Unlike mass-produced pork, our husbandry practices and superior genetics make ours exceptionally tasty, naturally juicy and fork tender. It is definitely not the “other white meat.”

Bacon: The famous ahhhh!-inducing PRMC bacon is made from our heritage pork bellies, cured in either a maple or sugar-free brine and applewood smoked. Known for its addictive qualities, our bacon contains no nitrates!

Seasonal Items & Other Tasty Bits: Our hams come from heritage pork legs and are cured in maple brine and apple wood smoked. Quarter hams, half hams, sliced or whole, it’s hard not to eat it right out of the package.

Lost Coast Grassfed Beef

Lost Coast beef offers the finest tasting, 100% grass-fed beef in the country. The pure-bred Black Angus cows are grass-fed and raised the old-fashioned way - naturally - with no steroids, antibiotics or growth hormones. Sausage

It has taken patience and practice, but with
the support of our friend and business partner Mark Keller of Keller Crafted Meats, PRMC has developed a delicious variety of unique, high quality, great tasting products including sausage, bacon, jerky, lard and—everybody’s favorite
—hot dogs.

Available Bits

Bacon: Ah, the famous PRMC bacon. Made without nitrites from the bellies of our heritage pigs – we offer our tried and true original maple-brined apple smoked bacon, our pepper bacon and our new favorite sugar-free rustic bacon.

Sausages: Our sausage is made with sustainable meats supplied by our rancher partners. Always nitrite and chemical free, it contains only the highest quality seasonings and ingredients.

Hot Dogs: A staple in the PRMC meat case, our hot dogs are made with Certified Humane Prather Ranch beef and organic spices with no casing or nitrites. Once you’ve picked up a pack of our dogs at a farmers market or our ferry building store–or tucked into a grilled dog from our hot dog cart or Eatery–you’ll understand why they’re constantly a customer favorite.

Jerky and Meat Sticks: Our jerky and meat sticks from Prather Ranch beef and Knee Deep vitellone and are a perfectly delicious healthy snack. Only high quality ingredients—we skip the nitrites.

Lard: Yes, lard. And lots of it! Ours comes from the back and kidney fat (leaf lard) of our heritage pigs and contains no oils or fillers. PRMC customers have come to re-appreciate the superior cooking qualities of lard–light flavor, good digestibility, high smoking temperature–and use it for sautéing, frying and, of course, baking. Praise the Lard!
