Our beef comes from the Prather Ranch, synonymous with the highest quality, best raised beef available. Their unique closed herd is raised on thousands of acres in Northern California. Certified by both Food Alliance and Certified Humane Raised and Handled, Prather Ranch does not use hormones or antibiotics. In addition, the beef is dry-aged—an increasingly rare practice—to develop a tenderness and rich flavor lacking in most beef today.

Our heritage pork comes from Certified Humane Raised and Handled or Food Alliance Certified Berkshire and Large Black pigs. Raised on open pasture, these animals are fed a balanced diet including fruit and vegetable culls from nearby farms. Unlike mass-produced pork, our husbandry practices and superior genetics make ours exceptionally tasty, naturally juicy and fork tender. It is definitely not the “other white meat.”

Certified Humane Raised and Handled, the animals are pasture-raised on mother’s milk and grass in the lush Willamette Valley near Eugene, Oregon. Sometimes called “red veal,” vitellone is older than traditional veal and is featured on menus throughout Italy and France.
