Cherries actually have a fairly short growing season. They’re just starting to come in now and then reach their peak in July. Be sure to purchase plump, firm cherries with green stems. They’ll range in color depending on variety, but they can be purple, reddish purple or bright red. Rainier cherries are a delicious yellow variety with red streaks.
When selecting cherries, make sure they feel firm and don’t have any soft spots or bruises. They should also be free of insect damage (often little holes) and should have no pitting or wrinkles. These are signs of dehydration, which will make them taste a little funky.
